INGREDIENTS
- 90cl skimmed milk
- 1 kg of fresh peas
- 16 scallops
- Garlic
- 3 tablespoons of butter
- 3 cube of broth
- Fresh ginger
- 3 radishes
- Sel
- Pepper
1. Cook peas in boiling water with the broth cube for 10 minutes. When cooked, drain and reserve the cooking juices. Finely mix the peas in a blender with the milk and ginger. If necessary, add a little of the reserved cooking stock until you obtain a creamy cream of peas. Adjust the salt and pepper seasoning if necessary.
2. Sauté garlic in melted butter in a hot skillet. Add the scallops and brown them quickly, maximum 30 seconds per side. Season with salt and pepper.
3. Spread the cream of peas on the bottom of the plates, place the scallops, decorate with thin slices of radish, and peas. It’s ready for you!
